At just 16, Stan Delimitrou’s culinary journey began at Vic Ave Pasta and Wine in Albert Park, under the watchful eye of Maria — a 70-year-old pasta master who guarded her gnocchi secrets closely. Stan’s passion quickly won her over, and he became the only other person trusted to craft the restaurant’s beloved gnocchi.
Today, The Gnocchi Project brings Stan’s decades of experience, tradition, and a touch of playful innovation to the plate. Alongside him is co-owner and head chef JJ, whose creative vision has shaped The Gnocchi Project’s signature menu. JJ has crafted over ten unique sauces and perfected the art of pairing them with our pillowy gnocchi, striking the ideal balance of comfort and bold flavour in every bowl.
